Details:

Cinić, located in Krasica in the province of Buje, is also included in the guide for the first time. Owned and operated by Ecio Cinić, this olive oil operation cultivates five hectares of olive groves with over 1.500 trees including Istarska Bjelica, "Italian" Frantoio, Leccino, Moraiolo and Pendolino. This year five tonnes of olives were harvested, yielding 600 litres of extra virgin olive oil. Gambaletto, the featured selection, is a dusky golden colour with fine clarity. In the nose, it is rich and harmonious, with notes of golden apple, green tomato and dried fruit. Full and round on the palate, it tastes of artichoke, lettuce and wild chicory, enriched by notes of medicinal herbs, most notably rosemary. Balanced in its bitterness and sharpness, this oil pairs beautifully with sea fruit, fresh vegetable salads, marinated poultry, chanterelle mushroom dishes, mussels, crustaceans, fish 'al cartoccio', steak tartare and fresh mozzarella.
