Thanks to this event, the špaleta (a piece of pork shoulder that is dried in a special way in the bora wind) has made a triumphant return to tables across Istria, fulfilling the vision of the organizers who launched the event in 2011. This unique tradition has found its way back into restaurants, production, and the very heart of Istrian gastronomy.
However, Vodnjan špaleta is not merely an event that celebrates tradition—it is also a fantastic opportunity for visitors to enjoy traditional dishes on Easter Monday at Stancija Buršić, including špaleta giravolta, pljukanci (traditional pasta) with špaleta sauce, sauerkraut, polenta with herbs, scrambled eggs with asparagus, minestrone, and more.
Along with exceptional food, visitors will indulge in a day filled with entertainment, featuring activities for children, a handmade fair, ice cream, fritule, and cocktails, therapeutic horseback riding, buggy tours of the Vodnjan area, sports competitions in running and volleyball, all set to lively music lasting into the evening!
