A well deserved result for Antolović, which has proposed an excellent product. This beautiful oil farm has been active since 1995 in Peroi, in the province of Grožnjan. Its founder and owner, Viviano Antolović, runs 3 hectares of specialized olive grove with 1,500 trees of typical local varieties. In the last harvest 100 quintals of olives were produced, equal to a yield of 12 hectolitres of extra virgin olive oil. We recommend the selection proposed by the farm, the Extra Virgin Antolović, which is an intense limpid golden yellow colour with slight green hues. Its aroma is definite and ample, rich in vegetal notes of artichoke, chicory and lettuce, together with elegant hints of officinal herbs, especially mint and basil. Its taste is complex and strong, with notes of country vegetables and a distinct finish of almond and pine nut. Bitterness is definite and pungency is present. It would be ideal on porcini mushroom appetizers, swordfish carpaccio, spinach salads, barbecued radicchio, lentil purée, pasta with artichokes, blue fish au gratin, grilled red meat or game, hard mature cheese.
