The Saints Hills Winery was established in 2006 by the enterprising couple Ivana and Ernest Tolj, who decided to embark on a new business and life adventure despite already having a well-established career in another industry. Their profound love for wine inspired them to plant vineyards in three distinct wine-growing regions. They chose Dingač and Komarna in Dalmatia, and a site near the village of Radovani close to Višnjan, in the western Istrian wine region.

Since then, they have become the only winery in Croatia to simultaneously offer wines from two different parts of coastal Croatia. They began with red wines in Dalmatia and white wines in Istria. The winery's name is inspired by the vineyard locations, each named after a saint: Sv.Lucija (Dingač), Sv. Roko (Komarna), and Sv. Ante (Radovani).

The winery takes great pride in its two state-of-the-art wine cellars: one built in Pelješac in 2012, and the other opened in Istria in 2024. On fifteen hectares of vineyards, they cultivate an array of white grape varieties, including Istrian Malvasia, Chardonnay, Sauvignon Blanc, and Sémillon. From these grapes, they craft exceptional wines, such as the Malvasia and Chardonnay blends, Nevina and Mala Nevina, the Sauvignon and Sémillon blend, Frenchie, and the superbly aged Chardonnay, Le Chiffre.
