The farm owned by Klaudio and Irena Ipša has constantly been renewed, becoming today a real olive growing pole with its own oil mill, cellar, tasting room, sales point and Istrian tavern. The couple has been running a small holiday farm in the green Oprtalj since the late 90s and currently manages 17 hectares of olive grove with 4,500 trees. In the last harvest 215 quintals of olives and little more than 30 hectolitres of oil were produced.
There are two very good Monocultivar Extra Virgin selections Ipša from Organic Farming, Frantoio and Leccino, recommended by Flos Olei. It is an intense limpid golden yellow colour with light green hues. Its aroma is ample and rotund, with hints of artichoke, chicory and lettuce, together with fragrant notes of thyme, mint and rosemary. Its taste is fine and complex, with a spicy flavour of black pepper and a strong almond finish. Bitterness is distinct and pungency is definite and harmonic.
